Grilled Corn, Mango and Avocado Salsa

Mango Salsa Ingredients:
  • 2 ears grilled corn on the cob
  • 1 mango, diced
  • 1 small red onion, finely diced
  • 1 roasted red pepper, diced
  • 1 small jalapeno, diced without seeds
  • 3 tablespoons chopped cilantro
  • 1 tablespoon olive oil
  • 1/2 lime, juiced
  • Salt to taste
  • 1 Hass avocado, diced

Mango Salsa Instructions
Hold corn upright on a cutting board and slice corn kernels off cob. Mix kernels in bowl with all remaining ingredients except avocado. Let sit in refrigerator for at least half an hour. Before serving, add diced avocado. Mix gently, adding more olive oil and salt to taste.

Mango Salsa and Guacamole


Mango Salsa and Guacamole

Mango salsa Ingredients :
  • 2 large mangos, finely diced
  • 1 ripe avocado, finely diced (optional)
  • 1/2 red onion, minced
  • 2-3 Tbsp mint, finely chopped
  • juice of 1/2 lime
  • pinch of salt
  • good crack of pepper
  • pinch of sugar (optional, if mango is underripe)
Mango Salsa Instructions :
Combine all ingredients in a large bowl and toss gently so as not to break down the mango and avocado. Serve immediately.

Guacamole
  • 4 ripe avocados, finely diced
  • 1/2 red onion, minced
  • juice of 1 lemon
  • upwards of 1 tsp salt
  • 1/2 tsp freshly cracked pepper
  • several dashes Tabasco
Instructions
Combine all ingredients in a wide, shallow dish and combine with a fork, mashing the avocado as you mix. Ideally you will have a combination of whole bits and creamy paste. Season to taste -- avocados can require a surprising amount of seasoning. Good immediately, but better the next day. To keep, apply cling wrap directly to the surface of the guac and refrigerate.

Mango Salsa with Red Bell Pepper

Mango Salsa Recipe Ingredients:
  • 1 mango, diced small
  • 1/2 large red bell pepper, diced small
  • 1/4 cup diced red onion, diced small
  • 2-3 T finely chopped cilantro
  • 2 T fresh lime juice
  • 2 T extra-virgin olive oil
  • 1 tsp. ground cumin (or less if you don't like cumin that much)
  • 1/2 tsp. green Tabasco sauce or your favorite hot sauce (more or less to taste)
  • pinch sea salt

Mango Salsa Recipe Instructions :
Chop mango, red pepper, and red onion into pieces about 3/8 inch square, and combine in bowl. Mix lime juice, olive oil, ground cumin, green Tabasco and salt in small bowl, whisk together, and mix into salsa. Add chopped cilantro and stir until combined.

Mango Salsa Ingredients


* 1 ripe mango, peeled, pitted, and diced (about 1 1/2 cup) (See: How to Cut a Mango)
* 1/2 medium red onion, finely chopped
* 1 JalapeƱo chile, minced (include ribs and seeds for a hotter taste if desired)
* 1 small cucumber, peeled and diced (about 1 cup)
* 3 Tbsp fresh cilantro leaves, chopped
* 3 Tbsp fresh lime juice
* Salt and pepper to taste
* Optional : Great with diced red bell pepper and jicama.

Mango Salsa Instructions

Combine all of the ingredients in a bowl. Season to taste with salt and pepper. If the salsa ends up being a little too hot or acidic for your taste, you can temper it by adding some diced avocado.
